If there is one thing I can’t resist at a party or potluck it is spinach artichoke dip. So when I came across a recipe for spinach artichoke dip potato salad in Southern Living, I was all over it. Regular potato salad can be on the bland side, but the addition of spinach, artichokes, cream cheese, and some Italian seasonings make it unbeatable. If you have an end of the summer party or potluck, give this recipe a try!
Spinach Artichoke Dip Potato Salad
I followed the recipe for this salad pretty closely, so it is probably best if I send you to the source. The two changes I did make to the recipe were to leave out the Parmesan cheese and the potato chip topping—both would probably be good additions though.
